Course 1 – thai vegetable salad, turnip, radishes, garden shoots + herbs, coconut milk

Paired with: 2017 Unicus (Grüner Veltliner)

Course 2 – albacore tuna, pickled wild bog cranberries, sea asparagus, chives, crispy seaweed, white soy

Paired with: 2017/8 Saignée

Course 3 – smoked sablefish, textures of new potatoes, horseradish cream, watercress,

Paired with: 2016 Dilemma (Chardonnay)

Course 4 – wood fired pizza, roasted red onions, aged balsamic, burrata, pepper cress, parmesan

Paired with: 2014 Cabernet Franc OR 2014 Cabernet Sauvignon

Course 5 – cast iron seared strip loin, 8 grain and carrot risotto, morels braised in red wine
